I was at the exact same spot a few years ago. My '68 289 V2 had about 90,000 miles and I wanted to pep it up a bit. I went with the Edelbrock Performer package from Jegs. The cam, carb and intake are a matched set and seem to work well together.
Only problme with this approach is that it starts you down the mod path. While I had the engine apart to change the cam, I changed a lot of other stuff (water pump, timing chain, fuel pump, etc.). After that comes headers, rear gears, rebuilt trans, driveshaft, etc. The car runs good, but I have a lot of blowby with the compression rings. Also, the 289 V2 had pretty low compression to start with. I need to do something with the short block. That leads you to the dilema of rebuilding the shortblock or going with a create motor. Both options have their +s and -s. All of this, like all hobbies, costs $$s and time.
