How much horsepower do you plan on in the future? What kind of highway drivability do you want?
If you want high HP, are OK with moderately high rpm's and want it fairly cheap, I would go with a ford 4speed top loader and around 3.5 to 4.1 rear gears with a 9 in. (It's gonna turn around 3000-3500 on the highway)
If you want better drivability, I would look at a T5 conversion with a WC (World Class) T5. It probably isn't as tough as the top loader, but these trannys survive pretty well behind warmed up 5.0's. I would still think 9in if you want more than 300hp. With the T5 I would deffinately go with 3.9-4.1 gears. (.63 overdrive) If you really want to, think of a tremec instead of a T5. I think this can be done about as easily, but will be more expensive.
Otherwise, I would look to a 4 speed toploader or t10 and keep the rest of it stock, but anyway you go, make a plan for the future or you will probably sacrafice tomorrow for today.
