Sounds like you found the problem but here's one more little idea. If you have air in your coolant system for whatever reason it won't cool efficiently i had this problem for 3 or 4 months and solved it by drilling a small, i think 1/8" hole in the top of the thermostat to bleed the air out of the system i've had no cooling problems since.
