You have an awesome Mustang, but sorry, it is NOT a GT350. All Shelby GT350's were Fastbacks in 1966 except 6 (I believe) rare convertibles. The quarter trim mouldings in the "C" section behind the doors as well as the fender emblems pretty much say it is not a GT either. The GT would have fog lights in the grille and GT emblems on the lower front fenders. The side stripes would have individual chrome letters spelling out Mustang and there would be no tri-bar pony with the Mustang emblem behind it.

The hood is either a Shelby hood or a Shelby scoop grafted on the original hood, but it looks really good. The front valance is a Shelby valance, the rear valance is a GT valance, but on a 66 it should have backup lights also. The car probably had a 289 V8 originally but the 302 is definitely a replacement, since the 302 didn't come in Mustangs until 1968.

All that said, the car is beautiful. Someone has put a lot of time and money into building a really sharp Mustang that really stands out. The engine has a lot of buildup, it should be a really stout package. The price seems a little steep, but I really don't know because I haven't seen it in person. These days originality does not carry as much weight as it did back in the 80's, so each car would be judged on the quality of the resto. Your son should love it, but if he doesn't, keep it for yourself, it looks like a really fun car!
