The best thing to do is shop around (like you said you're doing). I am shopping right now for my 66 that needs a lot of body work and my cheapest quote was around $3,500. My highest quote pushed the $7,000 mark. $3050 sounds a little excessive for a late model but I haven't seen the car. Some parts of the country are more expensive than others due to market sizes and shop repuation can factor in as well. Shop around to every place available and you'll start to notice patterns in what different aspects of the job will cost. That is the best way to weed out shops trying to overcharge you for something you might not need. This probably doesn't help a whole lot, but the point is... shop, shop, shop, and you'll find a good price and someone you can trust. The more educated you are the less someone can take advantage of you.
