Ok, I have a 2000 GT automatic and I put some 4.10 gears in. At the same time, my speedo and thus odometer were thrown way off, so I had to put a custom chip in also. 4.10's are about as steep as I would recommend for a daily driver. My gas mileage took a hit, and I cruise on the freeway at damn near 3000rpm. They sure make everyday city driving fun, though! My real mods are:

Bassani X-pipe, Magnaflow After-cat, C&L CAI/ 80mm MAF, Mac 70mm Throttle Body, Steeda Underdrive Pulleys, Ford Motorsport 4.10 Gears, Custom Tuned Autologic Chip. Steeda Sport Springs, Caster Camber Plates, Subframe Connectors, Strut Tower Brace.

The Bassani pipe was my favorite mod. Check my other thread out in this forum called "my overall mod evaluation." It'll give you a better idea of how each bolt on will affect your ride, since we have the same car.
If I had some sticky tires and control arms, I'd be running mid-low 13's.

Yeah, check out the other thread. As far as the top speed, I havent gone too high, but before the gears I pinned the needle at 150. After, I've been up to 130 no problem, but only once, cause it's just not safe. As far as limiting your top speed, gears won't hurt it to where you'd actually notice a decrease.

The x-pipe with the mufflers welded into the stock catback sounds great. It really rumbles, but is not too loud. When I get on it, it just screams. Let me know if I can help anymore.

Get a Precision Industries Stallion torque converter. It'll really wake up your auto and can drop your E.T. about 7-8 tenths of a second. Go here www.converter.com to find out about it.
