so i assume you are running stock heads and intake? well i shifted mine at 5500 and then i tried 5000. since i have stock components, the 5000 shift worked best and it was not floating the valves like it was at 5500. this is before i had the head mods below. one thing i got to tell everyone who is running a Ford cast head is that the springs in my sig made a WORLD OF DIFFERENCE!! i used to pull to 5500 and it sounded like it was dying, then i put the new valves springs in and i now raised it to 6000 valve float, so 5500 is usable now. i dont think you will have much gains anything above 5000 grand on a stock 5.0, but those springs stabalized the valvetrain very well.
