Sounds like a vacume leak to me, could be wrong. An X cam with stock heads and intake? talk about a missmatch!
It could also be out of time, how much advance do you have the engine set at? When you set the timming you had the "spout" connector out right? Is the PCV plugged in? When was the last time you checked T/P voltage? I have even see a MAF sensor get dirty and cause this type of problem, carefully clean it out with Brakeclean or something similar that does not leave a residue.
