Question cutting rear springs

I have eibachs springs, but hate the hight on the rear. Seem like it got highter then before. How do you cut the rear springs? Top or bottom of spring? When they mean 1 coil do you cut it exactly where it ends on top but one coil under. How will this effect the ride?
I was sold the conv. ones instead of the coupe, which I have. So it looks weird.
