I'm assuming you just care what cars YOU can beat with YOUR 2000 stang. I say that because since you've got some good basic mods, I would think you are a fair amount quicker than just a stock auto v6. You should be able to handle:
(Stock) Civic Si's Integra's Any lightly modded v6 stang before 99 A stock v6 camaro or firebird would be a good match Some of the Dodge and Chevy trucks with the V8's would be fairly even with you Basically, you've got a good start with the gears and the dual exhaust. Throw some pulleys on there and a chip (I'm saying that because you need one anyway since auto stangs with gears HAVE to have one or else the speedo is fucked up) and you'll be about even with the 96-98 GT's in HP, but they'll still have some signifigant torque on you.
