You won't hurt the car shifting at 7000rpm at all. They can safely spin to 7500+ maybe even more if it wasn't for the fuel cut off. Many people get the rev-limiter turned off with a chip and have no problems. FYI, if you don't shift that high, not only will you not go as fast but your valves and IMRC's(secondary throttle) could get stuck from the carbon build up. This happens to a few people who don't "air" the cars out too often.
