Yes, there are a lot of parts that are interchangeable between the 302 and the 351. The only reason I know that is because I was thinking about doing the same thing to my 5.0.
The only thing I would do different is instead of NOS, I was going with a Paxton Supercharger with an inner cooler. By the way just with the 9-inch rear end, you will be surprised at how much response you get off the line.
