Porting is removing material for better (typically MORE) flow characteristics. Polishing is just adding to that effect.
Some mild blend porting (removing of exhaust bump) is definitley worth it on the stock heads. Porting it _yourself_ around the valve area usually hurts performance as you dont know what you are doing... These are my TFS TW heads ported (compare to yours):
