At low to moderate levels, you don't have to change much. Most manufacturers will tell you to retard the timing 2 degrees for every 50hp, and that's about it. The nitrous/fuel ratio is preset by the jets in the kit, as long as your pressures stay consistent.

Pressure gauges aren't that much, and they're a worthwhile addition.
