Your stall should be determined after you know where the motor will make peak torque. What ever the stall is that you pick, with enough power, at the track the converter will flash to that point anyway. 2500 to 3K should be OK for your application. Since you speak 1/8 mile and have an AOD why not go 3.73's or even 4.11's?
Should be OK with the AOD. Maybe someone here can calculate what RPM it would be spinning at freeway speeds.
