It also sounds like your coolant is flowing too fast and isn't in the radiator long enough to cool down. If the new t-stat doesn't work, try a restrictor instead. I have cooling probs when going down the freeway too and I have a 180 t-stat. On the streets and idle, all day long, and in any heat it will run at 170.
