Yes, V6 and GT Mustangs use the same brakes. I believe your list is pretty complete, but I am pretty sure you'll need a bigger master cylinder. The following is from MPS:

Here is another very helpfull site on brake conversions. I had questions and got prompt answers from the sites author. This the best site on the subject I have found.
