If you delete the PS be sure to go with a manual rack&pinion. I have done both things you are asking but have no before and after times yet. I can only imagine it's gonna free up a good amount for just losing the drag. On the optimist side I would suggest 10-15.

You don't really need to get a manual rack. You can just block off the P/S lines.
