I did a little research and the only thing I found was that the heads between a "standard" and hi-po 289 were different. So between the regular 2 and 4bbl I would assume no. Will it perform the same? No, compression ratio was lower on the 2bbl's stock, so assuming the heads are the same it has to be different pistons for a lower C/R. Also, taking into account that your engine is now 40+ yrs old, its got some wear in it, unless your going through the entire engine. Your definitely on the right track with the upgrades, im sure you'll enjoy it! What intake are you swapping too?
