I like the looks of the fastbacks but they are expensive, if you want to really modify the car I would get a coupe. There are more of them out there and they cost less, and actually weigh a little less. A 351 is the biggest engine you can fit without removing the shock towers. You can get very good power from a 351 race-stroker, coasthigh.com has many kits to choose from.
