If you've got new pistons with reliefs in them, then I'd consider the e-cam with 1.7s. Since (by your sig) you've already got them, then you're that much further ahead. I'm not sure about custom grinds though, so I'll let the others go into that, but the E-cam sounds good to me with your combo.
