I also have a set of Edelbrocks that I wanted gasket matched...the machinist laughed at me. Apparently, Edelbrock heads are already matched pretty well to the gaskets. The Felpro 1250 intake gasket and 1415 exhaust fit pretty well.

If you're talking about porting and bowl work, then yes, it will help as long as you have the right combination of parts. You will probably lose some port velocity which will kill power down low, but your gears are good so hopefully you can get into the power band sooner.

Yeah, I'd get them cleaned up but maybe not go overboard. That's just me though.
