Arrow 357 stroker in a street car???

I just bought a new 95 stang gt with only 44k miles on it
Questions I have are these:

1) I wanna build my 302 with a 351W crank and bore it over .030 over, mild work includes 10.5:1 pistons, stock cam, port polished and worked over to 1.94, 1.60 hipo heads, and intake and injectors will be from a cobra. It will occasionally run nitrous on the track, but how streetable will this engine be, like MPG wise and idle??? It will still be EFI so I dont know about the computer work or...

2) Just work wit the same combo but just make it a 306? And....

3) Any suspension mods that have to be a must so I could stop freakin fishtailing?

Thanks to the peeps that reply
