ok, first off: capri == mustang

any mods that you can do to a mustang can be done to a capri. Second, how the hell is your car so ******* light? did you take out all the interior?

An engine swap is a big job, but is totally possible, though expensive (prohibitively in my case ). I'd say if your gonna do it, go all out and do the 351.
