I'd only use one set, you will find nothing but oil leaks in the near future, as yopu already found. Motorsport makes rubber beaded metal ones for about $40 per set. Those are awesome.

Like you said, your problem is from your rockers hitting your valve covers. I had the same problem. What you are going to have to do is remove the oil shield under the spout, and grind out the metal wall in there on BOTH sides.

You will also have to grind out some of the pillars(not the whole thing) inside the valve cover too. That will make it work. I promise. YOu may also want to thouroughly check your heads arount the springs and valves for any metal shavings that the rockers may have grinded out and remove them. They will ruin your piston walls in no time.
