The dipstick is obviously wrong, and if you drained out 7 quarts, then it's been wrong for a while. Drain it again, install 4 quarts with a new filter. Start and run the engine for a few minutes. Shut it off and go watch TV for a while. later, after the oil has drained back to the pan, clean and reinstall the dipstick, and note where the oil level is. With a small punch, mark this point on the dipstick and reference it as your new "add 1 quart" mark. Add one more quart, run it, watch TV some more, and after it's drained again, do the dipstick thing again. The new mark will be your new full mark.
