I did the interior on my '66 coupe about 3 yrs. ago. Standard seats with new seat buns, carpet, headliner, door panels, new insrument panel bezel, dash pad, repainting the inner doors and rear panels was about $1200 doing all the work myself. No new steering wheel or inside door handles or window cranks. Did replace window felts. Ended up looking pretty good for amateur work. Did take a lot of work though. Anyway, was what I could afford.
Good luck on yours.
